Apple Cider Spiced Muffins

Step #1 - Prepare Streusel Topping

400 degree oven

2 tablespoons of brown sugar
1 tablespoon + 1 teaspoon of Whole Wheat Flour
1/2 teaspoon cinnamon
1/8 teaspoon of nutmeg
1 1/2 tablespoon of unsalted butter - cut into small pieces.
Add 2 tablesppoons of chopped toasted tecans (optional).
Whisk together dry ingredients and cut in butter with fingers until mixture resembles coarse crumbs. Set aside. 

Step #2 - Prepare Muffin Batter

Combine the following dry ingredients in a medium bowl:

1 cup of whole wheat flour
1 cup of all purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 tablespoon of cinnamon
1/4 teaspoon of nutmeg
1/4 teaspoon of cloves

Combine the following wet ingredients in mixer bowl:

Beat 1 egg & 1/3 cup of brown sugar
Add 3/4 cup  of Middleton Organic Apple Butter
1/3 cup of pure maple syrup
1/3 cup of low fat plain yogurt
1/4 cup of canola oil
1/3 cup of Middleton Organic Apple Cider
Mix until well combined then add dry ingredients and mix until combined.  

Step 3 - Bake

Pour into prepared muffin pan and sprinkle with streusel topping. Bakin in 400F oven until tops are golden and spring back when touched. Approximately 15-20 minutes. Let muffins cool in pan for a few minutes before removing. 

Now it is time to sit back with a cup of coffee and a nice warm muffin and simply savor the moment! Enjoy!
